Tamarind Rice


500 gms rice  1tbsp cashewnuts
1 tbsp coriander seeds  1 tbsp peanuts
1 tbsp chana dal   1/2cup tamarind juice
1 tbsp sesame seeds  a small pinch of asafoetida
5 red chillies   a few curry leaves
1 tsp mustard seeds  salt to taste
1 tsp fenugreek seeds  oil as [needed]
1 tsp turmeric powder


* Clean the rice and boil in water .When three -quarter cooked , strain the water .Spread on a plate.
* Springle 4 tbsps oil over the rice and allow to cool.
* Heat 4 tbsps oil and fry chillies ,mustard seeds, fenugreek seeds, asafoetida and turmeric.
* Pour in the tamarind juice and add salt and cook till the gravy is thick
* Roast and powder coriander seeds and sesame seeds
* Springle over the rice.
* Fry cashewnuts, peanuts and chana dal in a little oil. Add to the rice.
* Fry curry leaves and add with the cooked tamarind mixture to the rice.
* Pour in 1 tbsp hot oil,if neede .Mix well and serve.
