Eggless Nan Khatai Cookies


250g butter
1/2 tsp fine salt
160g caster sugar
300g plain flour
50g fine semolina
3/4 tsp cardamom powder
1 tsp fennel, pounded coarsely

Prep: 15 mins Bake: 30 mins Makes: 50


Preheat oven to 150 C.

Cream the butter and sugar till fluffy and light.

Add in the flour, semolina and cardamom powder.

Combine well into a smooth dough.

Divide dough into 50 pieces. Roll into balls.

Place on a baking tray lined with non-stick paper.

Press an almond into each dough ball.

Bake for 30 minutes or until lightly brown.

Cool the cookies on a wire rack before storing in an airtight container.
