Drumstick Curry



8 drumsticks
2 tsps coriander seeds
1 coconut, scraped
1 tsp cumin seeds
5 green chillies
6 cloves garlic
5 red chillies
1 tsp mustard seeds
2 tomatoes
100 gms cashewnuts
1/4 cup vinegar
2.5 cm piece ginger
oil as needed
1 tsp turmeric powder
 salt to taste

    *  Peel and cut the drumsticks in to 5 cm long pieces.
    * Extract thick milk- from the coconut.
    * Soak the cashewnuts in water for half an hour and boil them in coconut milk till soft.
    * Fry the ginger,green chillies, red chillies,turmeric,coriander seeds, cumin seeds and garlic in a little hot oil. Grind to  past.
    * Boil the drumstick pieces in salted water till soft, Drain and add to the boiled cashewnut - coconut milk. Add the masala paste .Add salt and cook.
    * Heat a tbsp of oil, Fry mustard seeds and pour over the curry simmer for a while and serve hot.
