Cucumber curry



2 large cucumbers
6 red chillies
2 tbsps coconut scrapings
1/2 tsp mustard seeds
1/2 tsp fenugreek seeds
1/2 tsp turmeric powder
a small ball of tamarind
a few curry leaves
4 tbsps coconut oil
salt to taste

    *  Roast fenugreek seeds and red chillies and powder them.
    * Peal and cut rhe cucumbers in to small pieces.
    * Extract juice from the tamarind by soaking in a little warm water.
    * Heat the oil and add mustard seeds, powdered masala and turmeric powder. fry till golden brown.
    * Add tamarind juice, salt and the cucumber pieces.
    * Cook till the cucumber is soft.
    * Add the coconut scrapings and a few curry leaves.
