Coconut Rice


 
 
 
Ingredients

3 cups rice
 1tbsp fried cashewnuts
1 coconut, scraped   a pinch of asafoetida
1/2tsp mustard seeds   a few curry leaves
2 green chillies, slit   1 red chilli
1 tbsp chana dal   ghee as needed
1 tsp urdar dal  salt to taste

Procedure

* Boil the rice in water .Strain and keep aside .
* Heat 2 tbsps ghee and fry mustard seeds, a pinch of asafoetida, green chillies ,broken red chilli , chana dal and urad dal.
* When golden brown in colour add the scraped coconut and roast till a good aroma comes out of it . Add the curry leaves and sprinkle salt.
* Pour onto the rice and mix well.
* Add fried cashewnuts. Mix and serve with coconut chutney.
