Capsicum prawns



1/2 kg prawns, shelled
and drained 1 capsicum
1 onion
1 clove garlic
4 tbsps dry white wine
1 cup tomato juice
50 gms dried apricots
Salt and pepper to taste
5 tbsps oil


1. Chop the vegetables finely
2. Heat the oil and fry  the chopped onion and garlic till pink.
3. then add the chopped capsicum and prawns and cook till prawns become tender.
4. Add the tomato juice, apricots, salt and pepper.
5. After 4-5 minutes add the wine.  Lower the heat, cover with a lid and let it cook for about 10 minutes.  Garnish with black pepper and serve hot.
