Brinjal Chutney



2 large brinjals
a pinch of asafoetida
2 tsps urad dal
1/2 tsp mustard seeds
4 green chillies
a pinch of sugar
2 red chillies
oil as needed
1/4 cup tamarind pulp
salt to taste

    * smear oil over brinjals and roast them on a coal fire.
    * Remove the skin and mash .
    * Heat 2 tbsps oil and fry urad dal,. asafoetida, red chillies and green chillies.
    * Grind the brinjal pulp with the fried ingredients.
    * Add tamarind pulp, sugar and salt .
    * Heat 1 tsp oil and fry mustard seeds and pour over the chutney.
